We wanted to create something similar in flavour to a lemon slice, minus the excessive calories, so we put it all into a cookie and we think we've done a pretty good job! Made with almond and coconut flour and sugar-free, these cookies have a great soft texture, are a healthy alternative and are surprisingly really filling so you won't be tempted to demolish them all in one go. Great to pack with your lunch or to bring to your friend's place when you don't know what to bring.

Makes approx. 12 cookies
Ingredients:
1 cup almond flour
1/2 cup coconut flour
1/3 cup desiccated coconut
1/2 tsp baking powder
1/4 cup Natvia sweetener (this is for a sugar free option, you can also use regular castor sugar or coconut sugar)
1 chia egg (1 tbsp chia seeds mixed with 3 tbsp water and left to sit for at least 5 min)
Zest and juice of 1 lemon
6 tbsp Nuttalex Coconut Oil spread (or any dairy free butter), melted
1/4 cup soy milk
Lemon drizzle icing (optional - this is not sugar free)
8 tbsp icing sugar
Juice and zest of half a lemon
Method:
Pre-heat oven to 175 degrees celcius.
In a large mixing bowl, add all the dry ingredients and mix to combine.
In a separate small mixing bowl, add the melted coconut spread, chia egg, lemon juice, zest and soy milk. Mix and then stir into the dry ingredients until it forms a crumbly dough.
Grab a small amount in your hand test if the dough easily forms a ball. If it crumbles in your hand you will need to add a bit more soy milk.
When you have the right consistency, roll a heaped table spoon of the dough into a ball in your hand and flatten in your hand to make a cookie shape, then place on a lined baking tray.
Repeat for the rest of the mixture, then bake in the oven for 25 minutes or until the cookies are golden brown.
Once the cookies have cooled down, make the icing by mixing the ingredients together, then transfer to a piping bag with a small nozzle and drizzle/pipe onto your cookies.
