Vegan Tzatziki

5 ingredients. One hell of a dip! Our homemade vegan tzatziki is a crowd pleaser with our non-vegan family and tastes pretty damn close to the real thing. It is such a versatile recipe that can be used to freshen up any dish; whether it be to dunk your homemade wedges in, drizzle over your pizza, or to top your falafels!
Feel free to halve this recipe to make a smaller serve of tzatziki
Ingredients
- 500g PLAIN coconut yoghurt (we used 'Cocobella Original') 
- 1 cucumber (we used Lebanese) - note, you will not be using all of it 
- 1 tsp lemon zest (approximately 1 lemon) 
- The juice of 1/2 lemon 
- 1 large garlic clove 
- 1 tsp salt 
Method

- Grate enough cucumber to fill 3/4 cup. Squeeze out some of the excess juices 
- Finely grate the garlic 
- Now add the shredded cucumber, garlic, salt, lemon zest and juice to the coconut yoghurt and mix well 
- Don't be afraid to taste test and add extra salt or lemon juice if you prefer a more acidic flavour
