Vegan Summer Plum and Apple Crumble

This crumble is a a super easy and comforting dessert that's made without refined sugar and can also be gluten free!




Ingredients:

  • 8 ripe plums

  • 1 apple (red)

  • 1 pear

  • 4 tbsp coconut sugar

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • 3/4 cup almond meal

  • 1 cup quick oats (or gluten free oats)

  • 1/3 cup dairy free butter

  • 2 tbsp coconut sugar (for crumble)

  • 1/4 cup sunflower seeds

Method:

  • Start by pre-heating oven to 180 degrees celcius.

  • Chop the fruit into small chunks and add to a mixing bowl with the cinnamon, vanilla and coconut sugar and toss to combine.

  • In a separate mixing bowl, rub the butter with your finger tips into the dry ingredients until it forms crumbs.

  • Scoop the fruit mixture into a ceramic baking dish and then sprinkle over the crumb.

  • Bake in the oven for 20 minutes or until the crumb is golden brown.

  • Serve hot and with some vegan vanilla ice cream!
