Vegan Summer Plum and Apple Crumble

This crumble is a a super easy and comforting dessert that's made without refined sugar and can also be gluten free!

Ingredients:
- 8 ripe plums 
- 1 apple (red) 
- 1 pear 
- 4 tbsp coconut sugar 
- 1 tsp cinnamon 
- 1 tsp vanilla extract 
- 3/4 cup almond meal 
- 1 cup quick oats (or gluten free oats) 
- 1/3 cup dairy free butter 
- 2 tbsp coconut sugar (for crumble) 
- 1/4 cup sunflower seeds 
Method:
- Start by pre-heating oven to 180 degrees celcius. 
- Chop the fruit into small chunks and add to a mixing bowl with the cinnamon, vanilla and coconut sugar and toss to combine. 
- In a separate mixing bowl, rub the butter with your finger tips into the dry ingredients until it forms crumbs. 
- Scoop the fruit mixture into a ceramic baking dish and then sprinkle over the crumb. 
- Bake in the oven for 20 minutes or until the crumb is golden brown. 
- Serve hot and with some vegan vanilla ice cream!
