Vegan has never tasted better, once you try our succulent, smokey, BBQ 'pulled pork' burgers. Made with jackfruit, which has a similar appearance and texture to pulled pork when cooked with flavoursome ingredients, this burger is one that will fool your non-vegan friends! Jackfruit is also packed with nutrients, including fibre and antioxidants and is cholesterol free (unlike, actual pork), so it won't make you feel guilty for eating it. Packed full of flavour and perfect for a Friday night dinner, make sure to give this one a try!
Makes 4-6 burgers
Ingredients:
BBQ pulled pork:
300g jackfruit (we used Upton's Natural Original jackfruit), you can also buy canned from Asian supermarkets but make sure its young green jackfruit in brine or water and not in syrup
1 large onion, sliced
3/4 cup ketchup
1 tbsp Worcestershire sauce
1 tsp brown sugar
1 tsp liquid smoke
1/2 tsp sesame oil
1 tsp garlic paste
1 tsp paprika
1 tsp sriracha sauce
1 tbsp soy sauce
pinch of pepper
Coleslaw:
200g coleslaw mix
1/4 cup vegan mayonnaise
1/2 a lemon, juiced
salt and pepper
half a cucumber, sliced
sliced vegan cheese
6 vegan brioche burger buns (we made Gaz Oakely's 'Beer Hot dog rolls' recipe from his book)
oven baked potatoes chips to serve
Method:
Shred jackfruit with your fingers, place in a bowl and set aside
Prepare coleslaw in a mixing bowl - add all ingredients, mix and set aside
Fry onions in a little bit of olive oil and a tea spoon of brown sugar and cook till caramelised.
Combine all ingredients for the smokey sauce in a small saucepan, then add the caramelised onions and jackfruit and heat on the stove.
Now assemble the burger. Add a slice of vegan cheese, a couple of slices of cucumber, the coleslaw and finally the pulled "pork"
Serve the burgers with some oven baked fries!
