Ingredients
1 1/2 cups raw red lentils
1 red capsicum
2 tbsp olive oil
1 onion
4 cloves garlic
1 red cayenne chilli (2 if you're game)
2 tbsp curry powder
1 tbsp turmeric
1 tbsp ground coriander
1 tsp ground ginger
4 cups vegetable stock
1 cup coconut milk
1/2 cup chopped fresh coriander
Method
Start by prepping your ingredients. Finely chop the onion, garlic, chilli and capsicum
Heat the olive oil in a large pot on a high heat. Add the onion and garlic. Fry until golden
Now add the chilli and spices. Fry off the ingredients for 3 minutes
Add the stock and lentils. Cook on a medium-high for 5 minutes (with a lid on)
Add the coconut milk and cook for 10 minutes
Now add the capsicum and cook for a further 10 minutes
Turn off the heat and stir through the fresh coriander
Serve with rice or on its own!
