Vegan Red Lentil Dahl

It's tasty. It's easy to make. And only takes 30 minutes to get from pot to plate. Why not give our protein-rich Dahl a try.

Serves: 4

 

Ingredients

  • 1 1/2 cups raw red lentils

  • 1 red capsicum

  • 2 tbsp olive oil

  • 1 onion

  • 4 cloves garlic

  • 1 red cayenne chilli (2 if you're game)

  • 2 tbsp curry powder

  • 1 tbsp turmeric

  • 1 tbsp ground coriander

  • 1 tsp ground ginger

  • 4 cups vegetable stock

  • 1 cup coconut milk

  • 1/2 cup chopped fresh coriander


Method

  • Start by prepping your ingredients. Finely chop the onion, garlic, chilli and capsicum

  • Heat the olive oil in a large pot on a high heat. Add the onion and garlic. Fry until golden

  • Now add the chilli and spices. Fry off the ingredients for 3 minutes

  • Add the stock and lentils. Cook on a medium-high for 5 minutes (with a lid on)

  • Add the coconut milk and cook for 10 minutes

  • Now add the capsicum and cook for a further 10 minutes

  • Turn off the heat and stir through the fresh coriander

  • Serve with rice or on its own!
