Vegan Protein Banana Bread

This banana bread is definitely a winner. Super easy to make, will satisfy any sweet craving and also fill you up! Delicious with a cup of coffee or perfect to put in your lunch box for morning tea.


Ingredients:

  • 2 cups self raising flour

  • 2 tsp baking powder

  • 1/2 cup packed brown sugar

  • 1/2 tsp cinnamon

  • 2 scoops vegan protein powder

  • 1 1/2 cups mashed banana

  • 1 chia egg (1tbsp chia seeds soaked in water for 5 min)

  • 1/2 tsp vanilla extract

  • 1/2 cup almond milk

  • 1/3 cup sunflower oil

  • 1/2 cup roughly chopped almonds

  • 1/2 cup roughly chopped dark chocolate

Method:

  • Pre-heat oven to 180 degrees celcius.

  • In a large mixing bowl, add all the dry ingredients and mix to combine.

  • In a separate, smaller bowl mash the bananas then add the rest of the wet ingredients (except chia egg) and give it a mix.

  • Add the wet to dry ingredients, followed by chia egg, almonds and chocolate.

  • Once stirred well, let the cake batter rest for 10 min.

  • Pour the batter into a lined and greased loaf tin and sprinkle with some cacao nibs.

  • Bake in the oven for 30 min or until golden brown on top (also check the inside is cooked if the knife comes out clean once inserted into the cake).

  • Make sure to let the cake cool completely before slicing (it may be too moist)

This is an excellent recipe. I replaced the protein powder with coconut and excluded the almonds. A delicious and moist afternoon snack!
