Vegan Protein Banana Bread

This banana bread is definitely a winner. Super easy to make, will satisfy any sweet craving and also fill you up! Delicious with a cup of coffee or perfect to put in your lunch box for morning tea.

Ingredients:
- 2 cups self raising flour 
- 2 tsp baking powder 
- 1/2 cup packed brown sugar 
- 1/2 tsp cinnamon 
- 2 scoops vegan protein powder 
- 1 1/2 cups mashed banana 
- 1 chia egg (1tbsp chia seeds soaked in water for 5 min) 
- 1/2 tsp vanilla extract 
- 1/2 cup almond milk 
- 1/3 cup sunflower oil 
- 1/2 cup roughly chopped almonds 
- 1/2 cup roughly chopped dark chocolate 
Method:
- Pre-heat oven to 180 degrees celcius. 
- In a large mixing bowl, add all the dry ingredients and mix to combine. 
- In a separate, smaller bowl mash the bananas then add the rest of the wet ingredients (except chia egg) and give it a mix. 
- Add the wet to dry ingredients, followed by chia egg, almonds and chocolate. 
- Once stirred well, let the cake batter rest for 10 min. 
- Pour the batter into a lined and greased loaf tin and sprinkle with some cacao nibs. 
- Bake in the oven for 30 min or until golden brown on top (also check the inside is cooked if the knife comes out clean once inserted into the cake). 
- Make sure to let the cake cool completely before slicing (it may be too moist) 






This is an excellent recipe. I replaced the protein powder with coconut and excluded the almonds. A delicious and moist afternoon snack!
