This banana bread is definitely a winner. Super easy to make, will satisfy any sweet craving and also fill you up! Delicious with a cup of coffee or perfect to put in your lunch box for morning tea.
Ingredients:
2 cups self raising flour
2 tsp baking powder
1/2 cup packed brown sugar
1/2 tsp cinnamon
2 scoops vegan protein powder
1 1/2 cups mashed banana
1 chia egg (1tbsp chia seeds soaked in water for 5 min)
1/2 tsp vanilla extract
1/2 cup almond milk
1/3 cup sunflower oil
1/2 cup roughly chopped almonds
1/2 cup roughly chopped dark chocolate
Method:
Pre-heat oven to 180 degrees celcius.
In a large mixing bowl, add all the dry ingredients and mix to combine.
In a separate, smaller bowl mash the bananas then add the rest of the wet ingredients (except chia egg) and give it a mix.
Add the wet to dry ingredients, followed by chia egg, almonds and chocolate.
Once stirred well, let the cake batter rest for 10 min.
Pour the batter into a lined and greased loaf tin and sprinkle with some cacao nibs.
Bake in the oven for 30 min or until golden brown on top (also check the inside is cooked if the knife comes out clean once inserted into the cake).
Make sure to let the cake cool completely before slicing (it may be too moist)
This is an excellent recipe. I replaced the protein powder with coconut and excluded the almonds. A delicious and moist afternoon snack!
