Ok I know what you're thinking, but trust me these are good. The 'golden latte' bit is a lil excessive, however, this recipe is super simple, healthy and tasty. On our trip to the UK, we were feasting on these super decadent oat bars and realised they are extremely high in sugar and fat. So, we've been on a mission to recreate the classic 'flapjack' with a healthy twist. I love having these for breakfast when I'm on the go, or even just as a snack, so why not give these a go yourself.
Serves: 9-12
Ingredients
3 cups rolled oats
1 and 1/2 rolled oats (to blend)
1 1/2 cups shredded coconut
1 1/2 tbsp turmeric
2 tsp cinnamon
1 tsp ground ginger (dry)
1 tsp vanilla extract (note: extract is less concentrated than essence)
2-3 tbsp maple syrup (depending on how sweet you want it
2 ripe, medium bananas
1 and 1/4 cup plant-based milk
100g dark chocolate
Method
preheat oven at 180°
blend the 1 and 1/2 cups of oats in a food processor to create a flour (a Nutri Bullet works well)
Add the oat flour, along with all the other dry ingredients, into a bowl and mix well
In a seperate bowl, mash the bananas with a fork until smooth
Add the mashed bananas, maple syrup, milk and vanilla to the mix of dry ingredients. Mix well
Grease a brownie tray well (I used one that was 20cm x 20cm and 5 cm deep) and add the mixture. Press the mixture down tightly with a fork to ensure the surface is as flat as possible (this will prevent burnt edges)
Bake for no more than 20 minutes
Whilst the flapjacks are cooling, melt the dark chocolate in a microwave, ensuring to stir every 10 seconds to avoid burning
Use a spatula to spread the chocolate over the flapjacks
Once the chocolate has set, cut the flapjacks into squares
Voila!
