Who knew 'healthy' and choc-chip' could be used in the same sentence. These cookies are free from animal products, gluten AND refined sugars. So by all means, feast!
Makes: 10-12
Ingredients
2 cups buckwheat flour
1/2 cup coconut sugar (or 3/4 if you prefer a sweeter cookie)
1 tsp vanilla extract (note, if you only have vanilla essence, just use a few drops)
3 tbsp coconut oil
3/4 cup plant-based milk
3/4 cup dark chocolate chips
Method
Preheat the oven to 180°c
Combine the sugar and flour in a mixing bowl
Melt the coconut oil in the microwave. Add it to the mix along with the vanilla and milk. Mix well
Now add the chocolate chips and combine
Use your hands to distribute balls of dough on a lined baking tray. Press down lightly to flatten each one (keep in mind these will not expand)
Bake for 20-25 minutes, or until golden!
These are super easy to make and are great crowd pleasers (although I had to resist the urge to eat them all myself 😆) !
