Vegan & Gluten-Free Choc-Chip Cookies

Who knew 'healthy' and choc-chip' could be used in the same sentence. These cookies are free from animal products, gluten AND refined sugars. So by all means, feast!

Makes: 10-12

 

Ingredients

  • 2 cups buckwheat flour

  • 1/2 cup coconut sugar (or 3/4 if you prefer a sweeter cookie)

  • 1 tsp vanilla extract (note, if you only have vanilla essence, just use a few drops)

  • 3 tbsp coconut oil

  • 3/4 cup plant-based milk

  • 3/4 cup dark chocolate chips


Method

  • Preheat the oven to 180°c

  • Combine the sugar and flour in a mixing bowl

  • Melt the coconut oil in the microwave. Add it to the mix along with the vanilla and milk. Mix well

  • Now add the chocolate chips and combine

  • Use your hands to distribute balls of dough on a lined baking tray. Press down lightly to flatten each one (keep in mind these will not expand)

  • Bake for 20-25 minutes, or until golden!

These are super easy to make and are great crowd pleasers (although I had to resist the urge to eat them all myself 😆) !
