You deserve a fancy breakfast every now and then, and we promise this won't take you any more time to make than your regular bowl of oats. It's also great for using up that stale bread sitting in your fridge (#reducefoodwaste). We used chickpea flour in this recipe, which is a great substitute for egg and is cheap to buy; so don't forget to use it in other batters or when you're making a a vegan omelette!
Serves 2
Ingredients:
For the toast:
4 slices of stale bread
3 tbsp chickpea flour
I heaped tbsp cornflour
1 tbsp maple syrup
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/2 cup soy milk
Coconut oil (for frying)
For the topping:
Coconut sugar
1-2 bananas, sliced
Chia seeds
Nut butter
Mint leaves
Method:
In a shallow bowl, add the chickpea flour, cornflour, maple syrup, vanilla, cinnamon, soy milk and whisk with a fork to combine; making sure there aren't any lumps.
Heat up a small amount of coconut oil in a shallow non-stick pan.
Submerge 1 slice of bread at a time in the batter then carefully transfer to the pan. Fry for 1 minute on each side or until golden brown.
Transfer to a plate and repeat for the rest of the bread. Add a little more coconut oil to the pan and fry the slices of banana, sprinkling a little coconut sugar on each side to help it caramelise.
Top the french toast with some nut butter, the caramelised banana, a sprinkle of chia seeds, mints leaves, drizzle of maple syrup and apply to face!
