Twisted Fruit Loaf

We're giving Bakers Delight a run for their money with this homemade beauty! Perfect for breakfast or an after school/uni/work snack. This loaf is packed full of flavour and is relatively simple to make. Go on. Cut yourself a piece.


 

Ingredients

Dough

  • 1 1/2 cups dairy-free milk + more for greasing

  • 2 tbsp dairy-free butter

  • 1 tbsp apple cider vinegar

  • 3 1/2 cups flour + more for dusting

  • 1/4 cup caster sugar

  • 2 tsp dry yeast

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg


Filling

  • 3 apples (green or red)

  • 1 cup sultanas

  • 1 tsp dairy-free butter

  • 3 tbsp brown sugar

  • 3 tbsp water

  • 1 tsp cinnamon

  • Pinch of salt


Glaze

  • 1 tbsp caster sugar

  • 1 tbsp boiling water



Method

To make the dough:

  • Place the milk and butter in a small saucepan and heat until the butter is melted. Turn off the heat and stir in the apple cider vinegar. Let it sit until it is just warm

  • Mix all the dry ingredients in a large bowl. Make a well in the middle and add the warm milk mixture. Mix well until it forms a sticky dough

  • Flour a clean surface and tip out the dough. Knead for five minutes (dusting with more flour if necessary) until you have a soft, bouncy ball of dough

  • Grease a bowl and add the dough. Cover with a tea towel and let it rise for 1 hour


To make the filling:

  • Peel and finely chop the apples into small cubes

  • In a saucepan, over a medium heat, add the water and sugar. Mix until dissolved. Then add the butter and mix until completely melted

  • Now add the apples, sultanas, cinnamon and salt, and cook for 10 minutes (or until the apples have softened) stirring constantly

  • Turn the heat off and set aside



To form the loaf:

  • Preheat the oven to 180 degrees. Grease a medium sized cake tray and set aside

  • Tip the dough out on a floured surface. Roll out into a rectangular shape until it's around 1 cm thick

  • Once the filling mixture has cooled, spread evenly across the dough

  • Form a long log by gently rolling lengthways. Then cut the log in half, lengthways, exposing the layers

  • Place the two halves sideways and make a twist by overlapping one side over the other. Then coil the twist in a circle and gently place in the greased cake tray

  • Mix the glaze ingredients together and brush over the formed loaf

  • Place in the oven and cook for 30 mins or until golden brown. Brush over the glaze again and serve!
