Tofu Scramble 5 Ways

Tofu scramble would have to be one of the easiest, most satisfying breakfast dishes you can whip up. We love experimenting with different flavours when cooking this dish, so we've come up with 5 different variations for you to choose from; Cheesy, Spanish Beans, Green Pea, Chilli & Lime, and Middle-Eastern Avo.

Cheesy Tofu Scramble


Ingredients:

  • 150 g firm tofu

  • 2 tbsp water

  • 1/2 tsp salt (more or less depending on your preference)

  • 1/4 tsp mustard powder

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1 tbsp nutritional yeast

  • 1/2 tsp turmeric (for colour)

  • Pinch of pepper

  • 2 tbsp shredded dairy-free cheese (optional)

Method:

  • Use your fingers to crumbled the tofu in a pan with olive oil (on a medium-high heat). Fry for 3 minutes

  • Add all dry seasoning ingredients, as well as the water. Fry for 2 minutes

  • Now add the cheese and stir until melted

  • Serve on your choice of toast


 

Spanish Beans Scrambled Tofu


Ingredients:

  • 100g firm tofu

  • 1/2 cup beans (we recommend butter beans or black beans, however, any kind work)

  • 1/2 cup spinach

  • 1/3 cup pasata

  • 1 small garlic clove (minced)

  • 1/2 tsp chilli flakes (more or less depending on your preference)

  • 1 tsp paprika

  • 1/2 tsp onion powder

  • 1 tbsp nutritional yeast

  • 1/2 tsp salt (more or less depending on your preference)

  • Handful chopped parsley

  • Zest 1/2 lemon

  • Squeeze of lemon juice

Method:

  • Add the garlic and and tofu (crumbled) to a pan on a medium-high heat. Fry for 3 minutes

  • Now add the beans and spices. Fry for 2 minutes

  • Add the pasata, lemon juice and spinach. Cook until spinach has wilted

  • You may now eat


 

Green Pea Scrambled Tofu


Ingredients:

  • 100g firm tofu

  • 2 tbsp pesto

  • 2 tbsp water (if needed)

  • 1/2 cup frozen peas

  • 1/2 cup spinach

  • Zest 1/2 lemon

  • Juice 1/2 lemon

  • Salt & pepper (to taste)

Method:

  • Crumble the tofu in a hot pan with olive oil (on a medium-high heat). Fry for 2 minutes

  • Add the peas, pesto and lemon zest. fry for 3 minutes

  • Now add the lemon juice, salt & pepper, and water if dry

  • Demolish


 

Chilli & Lime Tofu Scramble


Ingredients:

  • 150 g firm tofu

  • 1 tbsp sesame oil

  • Zest 1/2 lime

  • Juice 1/2 lime

  • 1/2 finely chopped red cayenne pepper (or 1/2 tsp chilli flakes)

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Bunch of chopped coriander

  • 1/2 tsp salt (more or less depending on your preference)

  • 2 tbsp water (if needed)

Method:

  • Heat the sesame oil in a pan on a medium-high heat. Crumble in the tofu and fry for 3 minutes

  • Add the dry seasoning, lime zest, chilli and water (if dry)

  • Now add the lime juice and coriander

  • Consume



 

Middle-Eastern Avo Tofu Scramble


Ingredients:

  • 150g form tofu

  • 1/2 avocado

  • 2 tbsp water

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/3 tsp oregano

  • 1/3 tsp thyme

  • 1/2 tsp cumin

  • Pinch of pepper

  • 1/2 tsp salt (more or less depending on your preference)

  • 1 tsp nutritional yeast

  • Wedge of lemon

  • Handful of cherry tomatoes (halved)\

  • 1/2 tsp sesame seeds

Method:

  • Crumble the tofu in a hot pan with olive oil (on a medium-high heat). Fry for 3 minutes

  • Add the dry seasoning and water. Fry for 2 minutes

  • Turn off the heat. Mash the avocado in a seperate bowl and fold through the scramble

  • Serve on toast. top with a squeeze of lemon juice, cherry tomatoes and sesame seeds

I made the "Chilli & Lime" scramble and had it mixed through fried rice. Tastes absolutely amazing!
