Spicy Vegan Cauliflower 'Wings"

Now technically these aren't 'wings', however, cauliflower is an amazing vessel for flavour and a much healthier alternative to mock meats. This dish is super satisfying, fool proof and with this delish spicy sauce, you can zhoozh up your cauliflowers in no time.

Serves: 4
Spice level: Hot
Ingredients
- 1 head of cauliflower 
- 1 spring onion 
- 2 tbsp sesame seeds 
Batter
- 3/4 cups plain flour 
- 1 cup water 
- 1 tsp garlic powder 
- 1 tsp onion powder 
- 1/2 tsp salt 
- 1/2 tsp cracked pepper 
Sauce
- 2 cloves garlic 
- 1 whole spring onion 
- 1/3 cup Sriracha (or less if you can't handle much spice) 
- 2 tbsp brown sugar 
- 1 tbs sesame oil 
- 1 tbs rice vinegar 
- Juice 1/2 lemon 
Method
- Preheat the oven to 180°C 
- Chop the cauliflower into bite-size pieces, and wash thoroughly 
- Mix all the batter ingredients with a fork until smooth 
- Add the cauliflower and batter into a bowl and mix well until fully coated 
- Place the cauliflower in a tray, ensuring any excess batter does not get tipped in 
- Place in the oven and cook for 45 minutes 
- In the meantime, get started on the sauce. Add all the sauce ingredients to a food processor (I used a Nutri Bullet) and blend until smooth 
- Once the cauliflower has cooked for 45 minutes, pour over the sauce and give it a light mix, and place it back in the oven for around 10 minutes 
- Serve with finely chopped spring onion and a sprinkle of sesame seeds
