Loaded Sweet Potato Nachos & Fries

Here is a super simple, healthy recipe that you can adjust according to your personal preference - whether you'd prefer sweet potato fries, tortilla chips, plain fries or even on top of a bed of lettuce - this is a dish you can easily whip up and wow any guest!


 

servings: 2 cooking time: 1 hr


Ingredients

  • 2 large sweet potatoes

  • Olive oil

  • Paprika

  • 1/2 red onion

  • 1 large tomato

  • Small bunch of coriander

  • 1 avocado

  • 1/2 lemon

  • 1 can of black beans

  • Our signature cheese sauce

  • Hot sauce of your choice

  • Handful of chopped parsley


Method

  • Thinly slice the sweet potatoes using a mandoline or a knife (or cut into simple chip slices)

  • Place on baking tray with a drizzle of oil and sprinkle of paprika. Cook at 200° and flip after 15 minutes

  • While you're waiting for the chips to cook, start prepping the toppings. To make the pico de gallo, finely shop the red onion, tomato and coriander, and mix with juice of 1/4 lemon

  • Mash the avocado in a seperate bowl with a fork and squeeze the juice of 1/4 lemon

  • Drain and rinse the black beans

  • Once the chips are crispy, place them around your serving dish. Add the beans, pico de gallo, avocado, cheese sauce (make in advance), drizzle of hot sauce and chopped parsley

  • Devour
