After a busy day, who doesn't want to dive into a decadent dessert, however, there comes a time where this daily habit wreaks havoc on your bod. But do not fret! We have a super rich choc-mint mousse that is free from refined sugar and fool-proof to whip up. This recipe was also an absolute winner for our non-vegan parents and they were shocked to find out what exactly made our mousse so flipping creamy;)
Serves: 2
Ingredients
1 1/2 avocado
200 mL coconut cream
50g dark chocolate (we recommend at least 70%)
1 tbsp cocoa powder
3 tbsp maple syrup
6 mint leaves (you can use essence, but fresh works best)
1/2 tsp vanilla extract
Pinch salt
Method
Break up the chocolate in a heat-proof bowl and melt over a bain-marie (or if you're lazy like us, zap it in the microwave, making sure to stir every 5 seconds or so)
Now all that's left to do is blend up the melted chocolate with the rest of the ingredients in a food processor until smooth
Place in the fridge to set for an hour. Enjoy! (and enjoy you will)
