Fig and Coconut Raw Bars


We're nearing the end of fig season so what better time to utilise this gorgeous fruit than now! This is the perfect healthy snack that is super easy to make, has no refined sugar and is gluten free!


Ingredients:

  • 1 cup almonds

  • 1/2 cup brazil nuts

  • 1/2 cup mejool dates, pitted (or regular pitted dates soaked in hot water, then drained)

  • 1/2 cup desiccated coconut

  • 1 cup dried figs

  • 1/4 cup coconut oil

  • A few fresh figs, sliced for the top


Method:

  • In a food processor, blitz the nuts, dates and figs

  • Add the coconut and coconut oil and blend till the mixture is well combined

  • Line a deep baking tray with greaseproof paper and press the mixture down till its 2.5cm thick

  • Top with the sliced fresh figs and a sprinkle of desiccated coconut and leave in the fridge for at least 3 hours (until the bars harden)

  • Enjoy as a lunch box snack or morning/afternoon tea!
