I think we can all agree chips are the ultimate crowd-pleaser, but who said you couldn't shake it up a bit with a lil eggplant? We've come up with a super easy, healthy recipe that doesn't require any frying to get that delicious, crunchy exterior. And we'll throw in a maple-glazed carrot recipe while we're at it so accompany your chips or any other dish for that matter.
Eggplant Chips
Ingredients
1 large eggplant
1 tbsp olive oil
Batter
1/3 cup rice flour
1/2 cup plant-based milk
1 tsp garlic powder
1 tsp paprika
1/2 tsp nutmeg
Zest of 1/2 lemon
1/2 tsp salt
Pinch of cracked pepper
Crumb
2/3 cup panko breadcrumbs
1 tbsp nutritional yeast
1/2 tsp salt
Method
Preheat the oven to 180 degrees and line a baking tray
Slice the eggplant long-ways into chip-shape strips
In a large mixing bowl, add the batter ingredients in a bowl and whisk together until combined
Add the eggplant to the bowl and toss until well-coated
In a separate bowl, mix the crumb ingredients together
Take each eggplant slice out of the batter, allowing the excess to drip off, coat with the crumb and add to the baking tray
Drizzle with olive oil and bake for 45 minutes, turning the chips after 30 minutes
Voila! Dip in your favourite sauce or vegan aioli
Maple-Glazed Roasted Carrots
Ingredients
3 carrots
1 1/2 tbsp dijon mustard
2 tbsp maple syrup
1 tbsp soy sauce
1 tbsp olive oil
Method
Preheat the oven to 180 degrees and line a baking tray
Cut each carrot in half (long-ways) and then cut each half into three slices
In a large mixing bowl, whisk together the glaze ingredients and then add the carrot. Toss well until completely coated
Place the carrots on the tray, leaving the remaining mixture in the bowl, and bake for 30 minutes
Turn the carrots and bake for another 30 minutes
Take the carrots out of the oven, brush over with remaining glaze mixture and serve!
